While waiting for the pasta to cook, I started flaking 3 pieces of tuyo (dried herring).
Things have been so busy at work that I opted to cook dinner tonight as therapy despite A's invitation to eat out so as not to tired myself some more (very lucky to have such a supportive hubby). When we got home, I realized that I'm a little tired to cook. So, I went for the quick fix meal again...pasta. After going through the pantry and fridge, I ended up with the following ingredients: I realized we were out of calamansi, but I don't want to think again of what else to cook, so I went ahead with it anyway. While waiting for the pasta to cook, I started flaking 3 pieces of tuyo (dried herring). After cooking the pasta al dente and draining off the liquid, I just poured the flaked tuyo, 2 teaspoons of pesto and, drizzled in some of the olive oil. Blending everything together, I've topped it off with grated parmesan cheese. The taste if OK (A went back for thirds), but could've been better with calamansi juice. Oh well, there's always next time. Now to hit the sack...
