Rustan's was having a buy 1 take 1 sale on beef shanks. I got ourselves some good-looking pieces to bring home. Being in a lazy Sunday morning mood, I opted for a one-pot meal. This is rather simple since it involves placing everything in a pot and forget about it until the meat is cooked.
I used our rice cooker for this dish and the following ingredients:
3 beef shanks
water (up to the max level of the rice cooker)
dried lentils
mirepoix (combination of cut onions, celery, carrots)
cut tomatoes
ground black pepper
3 bay leaves
2 kafir lime leaves
1T roasted red chili paste
dash of cayenne pepper
dash of cinnamon
salt
Add the first 4 ingredients together. Cook until the meat is tender. Add the remaining ingredients and simmer to make the meat more tender.
After all the patience of waiting, here it is:
3 beef shanks

We were easy to please with this dish. It's simple to prepare and has that comfort food feel to it. It was our TV dinner while watching Ratatouille =)
